Tomato Salad




Let me be honest with you.... I am not a fan on salads....for all the years Iv struggled with my weight I have never once enjoyed a salad ...up until I tasted this one

It is very simple and does not call for ingredients that you will find in the aisles of fancy gourmet stores that will leave you with a hole in your pocket!

Before I go to my recipe let me introduce to you my sister ...shes the best older sister any girl could ask for!

A, my sister is an inspiration in more ways than one ....she is fighting fit and gorgeous ....and this salad is something I ate at her home ......

Tomato Salad

* Note : You need to make this and eat it ASAP ....no making ahead of time with this recipe else it goes all soggy..

1 firm red tomato , chopped into small bits
1 tsp fresh chopped coriander
1-2 tablespoons peanuts ....roasted , outer coverings removed and coarsely pounded
Oil  0.5 tsp
Hing 1 pinch
Degi Mirch   1 pinch
Zeera  1/4 tsp
Normal red chilli powder  1 pinch

Combine chopped tomatoes and coriander leaves.

Heat oil add zeera , let it splutter ...then add hing and both chilli powders .

Next add the crushed pea nuts , combine well, add a little salt

Add on top of chopped tomatoes , combine well

Eat RIGHT AWAY

Mint and Tulsi Tea


This is a no tea tea! Confused are you? Its more of a "Kadha"....decoction in hindi.
I love this drink ..its warm and full of flavour .....leaves you with the same pick me up effect as regular tea ...only that its healthier and good for you....

Holy Basil (Tulsi) is known widely as a miracle worker with several health giving benefits so is mint ...and you add to that the goodness and warmth of spices like cinnamon , cloves and peppercorn and you have a winner!

Great to sooth evening hunger pangs :))






Recipe 

In a pan boil water with lemon grass stalks , mint leaves and some Holy Basil (Tulsi)

Add whole pepper corns (1-2 per cup) , cinnamon , black cardamom , cloves (2-3 per cup) and let it all boil away till the water is reduced to half.

It will turn a lovely amber color, sweeten with honey or drink as is!

Anti -Oxidant Hibiscus Juice Shots

I am a teenie weenie bit vain so when a drink promises radiant skin and anti-ageing benefits it must feature in my day!

Well , jokes apart Hibiscus flower has been used for centuries in Asia and in the Caribbean in teas and other drinks. Also used as a medicinal aid the hibiscus flower is known to have several health benefits like lowering blood pressure etc.

Vendors selling a deep red sweet iced tea called  Agua Fresca (hibiscus teain opean air markets in Mexico is a common sight.

Hibiscus flowers contain high levels of anti-oxidants including flavanoids ....the same stuff found in red wine :))

Hibiscus flowers contain 17% more anthocyanins ( anti-oxidants) ....simply put the good stuff that makes your skin glow and helps fight ageing :)))  .....than other juices!

Tastes so refreshing ........a berry like taste with slight flowery undertones ... I dont know about the health benefits but I know every time I have this I feel a spike in my energy levels ....:))))

So here it is ......





For 1 Glass you need

Petals of 2 fresh hibiscus flowers - washed 
1/2 tsp lemon juice
1.5 - 2 tsp honey
Water

In the smallest attachment of your mixer add washed flower petals along with lemon juice. Leave in the fridge for 1-2 hours.

Grind with a little water till you get a beautiful concentrate all ruby red and pretty ...should look like this......




Add a glass of water .

Stir in some honey and drink to good health :))
